In a pot with a large bottom, put 1.5 L cold water, 5 big spoons olive oil, 2 big spoons vegetable oil, parsley, garlic, onion, chopped carrots and potato, salt and pepper corn. Cook about 1 hour until vegetables are tender. Add 1–2 large spoons vinegar and cook scaled fish on low flame for 10 minutes. Remove fish and pour over a bit of clear soup with olive oil. Strain the soup, add 2 big spoons rice, and cook until rice is slightly overcooked. Serve fish soup as an appetizer with Parmesan. Cooked fish is served as a main dish with mayonnaise and cooked potato, seasoned with olive oil and ground pepper. Tips: To intensify the soup's taste, use minimal water while keeping the fish submerged. Use a special oval pot or cook only one or two fish at a time. Slightly under-salt the soup since it is eaten with Parmesan. | |
